I've challenged myself to feed our family of four on only $30.00 this week and food from our pantry. Tonight we are having:
Fiesta Chicken - dip chicken in a egg, then dip in a mixture of (1) cup flour & (1) package of taco seasoning. Pan fry in olive oil; serve with sour cream & salsa. YUM!
Sides - Spanish Rice (.25/each at Krogers) & Chips & Guacamole (easy recipe below)
I made homemade guacamole, well sort of....this isn't at all authentic but it's really cheap and it tastes great! It took less than 5 minutes to make, photograph and post - you can't beat that!
Use a food processor or mash with a fork, and mix 1 avocado, 1 TBSP salsa & 1 TBSP sour cream + salt......That is all!
Did you know that if you're having a difficult time getting the seed out of an avocado, you can just stab it with a knife and pull it right out?? Super Easy

Cut with pizza cutter, sprinkle with olive oil, salt or dipping spices bake at 250 for around 10 minutes on each side................
Done! And much healthier than regular chips & dip!
These turned out GREAT! My son said they were the best chips he has ever had
